Yes it’s another of those gnomic monostichs. But note μή not οὐ: πειρῶ is imperative (from middle πειρῶμαι<πειράομαι), “Don’t ever try.”
Akh hakh, πειρῶ is the pres. middle imperative, that went right over my head.
