Problem with Seeing Greek Font in epub, etc.

I have recently been looking at Google-archived books in Classical Greek and have discovered that when I download a copy in a format other than PDF, e.g., epub, Kindle (mobi), etc., the Greek appears as something like BetaGreek – all alphanumerics: r7b(2q etc. Although I have tried a number of e-readers, nothing shows the original Greek. Is there a way that I can get the Greek to appear?

I download the books to a MacBookPro with Snow Leopard.

I suspect most of these books were converted to text using some kind of text-recognition program which was not designed for Greek characters…the only way there will be a readable text version (i.e., not image-based, as a pdf etc) is if someone has gone through and produced one using something other than the standard processing methods.
