For indicative, a velar consonant before an ending tends to become an ξ in the future and aorist tenses. Example: δοκέω, δόξω, ἔδοξα. But then I read ἀδικέω, ἀδικήσω, ἠδίκησα. Why did the second set of verbs keep the κ? Just because it is a bit irregular?

Coz it is one of those contracted verbs, it is quite regular

Actually, ἀδικέω is regular for a contract verb in -εω.. δοκέω is slightly irregular in that it has a contract present stem but other principal parts have a consonant stem without the contracting vowel.
