J.R. Cheadle’s Basic Greek Vocabulary is excellent, though it contains nouns and adjectives so is closer to 1,000 words. It also has a list of prepositions/particles and irregular princple parts (all 6 of them). It was designed for the old ‘School Certificate’ in the UK, an exam taken at 16, scrapped in favour of the O-Level (now GCSE) in 1951. Needless to say, the GCSE these days requires rather less vocabulary.
The books like 500 Spanish Verbs that the OP is referring to are books where every page is one verb, and it gives the conjugation in every tense.
