When I use the Greek for the English “the good” in isolation, should it be τὸ ἀγαθόν or τὸ ἀγαθὸν? (And why?) Thanks!

τὸ ἀγαθόν. You would only use the grave in the context of a Greek phrase or sentence. When citing Greek words, you always default to the lexical accent (the accent as it appears on the word in the lexicon). τὸ with the grave, however, because it’s followed by ἀγαθόν – it’s not in isolation.
Of course, one should always accentuate the positive:
