"Esse" is in fact an irregular VERB meaning "to be." Just as in French where "Etre" is irregular in its own right.

The sum, es, est, sumus, estis, sunt you mentioned is the present tense formation of esse.

Check out the third principal part fui from which the perfect tense is formed for even more irregularities.
