I just noticed that the numbering for Plato goes, for example, 32a, 32b, 32c, 32d, 32e in the Loeb but when Greek letters are used goes 32α, 32β, 32ξ, 32δ,32ε!! Why is that?! Somehow I know that the answer is going to have to do with Byzantium.

The Stephanus numbers don't have a Greek version. :) What you're seeing is a bug in Perseus.
