Not all of them do. English is a mix of anglosaxon, old norse, old french, latin and indeed some greek loanwords. Most greek words have been taken into the English language from science. In medicin it's a praxis that anathomy is in latin and pathology (deseases) are named in greek.

i think this had to do with the history of the Greeks. Looking to the history you will know how powerful they were before. and i mean in everything. politic and also knowlegde and the universities. they together with the persians and italians were the most 3 powerful countries of the world and it had an affact to their knowledge too because they tried to be the best in everything. compared with the situation now, why is English the international language, why not chinese or japanese or ... ?
still in many universities Persian/Greeks methods are learned and used for many subjects. this could be also a reason why many Greeks words are came into English or other languages.
NOT ALL ofcourse, many of woords which are learned at the universities for some special subjects like medical, are Greeks. this because many important theories came from some big Greek's professors.
