For more music with Latin lyrics:

Carmina Burana - Carl Orff
Carmina Catulli - Carl Orff

Also look for recordings by the New London Consort, they've released wonderful collections of Medieval music with Latin lyrics. Ditto for Thomas Binkley's groups (Studio der Fruhe Musik and others). Some of Joel Cohen's early music groups have recorded Latin songs too.

Of course there are the great collections of plainchant and other Medieval liturgical music. And don't forget the incredible stuff by Hildegard von Bingen.

And we all know the professor's work :

Lege, canta, ride !
Similis sum folio de quo ludunt venti.
