Thayer's has some interesting breaks in the spellings of the Greek words:
απο-δι-οριζω / επι-συν-αγω etc...
These can’t be syllabification or stem helpers, what do these breaks represent?

They tell you that it's a prefixed verb, so αποδιοριζω is οριζω with the prefixes απο and δια -- this is important to know because prefixed verbs have some extra complications in their conjugation.
