I would greatly appreciate any input concerning the meter and rhyme of latin poetry.

What specifically do you want to know? There are different styles, and meter in Classical Latin is classified by length, not just accent. Rhyme like in English doesn't exist, but there is some rhyme.

There is a book that I had from the library called "Beginning Latin Poetry Reader".

It has selections of poetry and is heavily annotated, explaining a lot of the basics and idiosyncrasies.
