Now my question is does that say, "By Sea, By Land, By Stars" Or would it be better with "the" in "By (the) Stars"?
By Honour, By Truth, By Glory, This Is The Way To The Stars?

Per is with the accusative: per mare, per terras is correct.
It's also correct to add 'per astra'.By Honour, By Truth, By Glory, This Is The Way To The Stars?
There are different ways to translate this.
I would put it this way: Per honorem, per veritatem et per gloriam via ad astra fert.
Litterally this means: the way to the stars goes by honor, by truth and by glory.
This may be to long for on a sword?
