There is some nice learning material at Cuneiform Revealed, including links to a video of someone practicing their cuneiform with clay and a carved-up chop-stick. There's a precis of Akkadian grammar, and even reading lessons (with answers).

The only caveat is that you'll need to install a Unicode-aware cuneiform font (which is, not surprisingly, not standard on any OS I know of). I favor Assurbanipal (Neo-Assyrian being the standard hand for diplomatic transcription of all periods), but the site has two of its own for you to choose from.
